Spontane fermentatie van de drie druivenrassen samen in oude manzanillavaten. Ramiro gebruikt geen temperatuurcontrole. De vaten zijn bijna volledig gevuld om de florvorming zoveel mogelijk te beperken. Na twee jaar rijping wordt de wijn onversterkt gebotteld, in totaal minder dan 1000 flessen. 

Het proeven van deze Carrascal is een werk van geduld. Initieel valt vooral de ziltigheid op, met een ietwat medicinale toets en veel complexiteit. Na een uurtje opent de wijn zich volledig, komt er wat fruit boven, honing,... de aroma's worden breder en zuiverder. In de mond is de wijn zeer expressief, met enorme lengte en grote complexiteit.

I have a Doberman. She is a ball and toy destroyer. She is the most obsessive retriever I’ve ever had. Her retrieving urge, and indefatigability, puts my golden retriever to shame. They’re very heavy ball and bounce, so you have to be careful throwing it in the house cause you could hurt breakables. Whoever said that these feel like they came from the dollar tree must have been talking about something else. They are thick and sturdy balls. UPDATE: it has now been THREE MONTHS and our Doberman STILL has not destroyed these 2 balls. We play with them many times each day. WORTH EVERY PENNY ADDITIONAL UPDATE: it’s now been nine months. Took this photo this morning. We still have the balls and have since ordered two more. She chews on it multiple times every day. There’s a little hole in it now and it doesn’t squeak anymore but it’s 98% intact and still essentially indestructible. These balls are worth gold.
